The Antech Family's M L'Ancestrale wine, from the Limoux region of Languedoc-Roussillon (France), is a living tribute to the history of sparkling wines . It is made with the local Mauzac grape, using the ancient "Ancestral Method" (also known as Pét-Nat or pétillant naturel).
This method is remarkable because the fermentation starts in the tank and finishes naturally in the bottle without the addition of tirage liqueur, uniquely capturing the carbon dioxide and allowing the natural sugars of the grape to create a soft and light bubble.
The Antech family, with a long winemaking tradition in Limoux, produces this Ancestrale using carefully selected grapes. The result is a slightly sweet, effervescent wine with rich flavors of baked apple and peach, and a distinctive freshness thanks to the area's microclimate, influenced by the Atlantic Ocean and the Pyrenees Mountains.
